One of the objectives of my module is to relieve
the pilot of required intervention.
The thing takes care of itself. Less load on the
pilot.

So, would not the simple solution be to wire both
sides of each pressure switch to a momentary push button switch?
I have
gages installed and so can observe the hi/lo pressures. A push of the
momentary switch should start the pump.
