That would work . . . . but wouldn't it be
preferable to have a solution that keeps the problem from becoming a problem
requiring in flight attention in the first place ?

So, would not the simple solution be to wire both
sides of each pressure switch to a momentary push button switch?
I have
gages installed and so can observe the hi/lo pressures. A push of the
momentary switch should start the pump.
