 Also, didn't you fall for the old Mazda practical joke of using the rear housing water temp sensor for oil temp?  Was that just changed while waiting for the new turbo?  If so, all bets are off as to what he temp used to be.  
 
Correct again. But, the coolant AND oil temps are both rising much more than they were before, and the ambient temp is 20 degrees cooler. Perhaps the old gauges were off, but before installing the EM2 I did run WOT for 1.5 hrs without apparently overheating anything or loosing any coolant, so I think they were ok. Also, this seems to coincide with strange engine / mixture behavior.  Note that I had to richen the mixture almost to the stop to keep it running, and that I turned off one set of injectors to get it to smooth out. Could this be related somehow? How many annoying failures can one guy have at a time???

Must be specific with details.  Did you turn off one set of injectors before or after having to turn mixture control full rich?
 
If it was before, I am not surprised (probably normal on your turbo installation, full explanation would take longer than I have).   If it was after, I would be alarmed (something is terribly wrong but I can't tell what with the available data).
