I don't think that you can just remove the thermostat
from the oil cooler.  I think that it opens to close
off the bypass port and opens the path through the oil
cooler, or something like that.

Ok. I took it out because yesterday I flew around the patch with my new and
much bigger scoop and had higher temps and felt end of the oil cooler and it
was cool to the touch. So I started to think something wasn't letting the
oil through the cooling coils/fins. I thought removing the thermostat would
open up the core - guess I've got that backwards! When I had my engine being rebuilt last month I flushed the oil cooler with
mineral spirits and took out the thermostat and tested it in the kitchen for
correct operation. It opened (grew or shrunk - can't remember) at about 175F
if I recall. Whatever Haynes says it's supposed to do - it did.
