I have heard from a few builders that the little turn downs
virtually eliminate the soot issue and that they also reduce
engine noise in the cabin.

Huh?  Well I guess that fits the definition of "sport" aviation as opposed to "this is much better than certificated stuff".  Make sure that your experimental actually performs experiments.  Soot and noise reduction, as you described, will surely reduce performance also.
