I have the Davtron digital OAT gauge on my panel, purchased from A.S., and
it comes with a connector between the sensor and indicator. The connector is
already installed in the cable about 6 - 8 in. from the sensor. If you
haven't already purchased your OAT gauge, take a look at this one - comes in
degrees C or F. They also have one that is a voltmeter plus OAT instrument
in case your panel is getting crowded. The thing seems quite accurate and is
very easy to read.

Completely moots the question about connectors in your OAT system.
