After you finished bonding the
canopy skin in place, what did you use to protect the inch or so of
exposed plexi? 

90% complete, except for the sanding...

I found 3M plastic (Vinyl?) electrical tape to protect the exposed areas nicely and, especially at the edge, it is quite effective against sanding to taper the skin to the glass.  The tape easily stretches around curves.
