You then don't understand the system operation.  The probe is the hot junction of dis-similar metals. Your meter whether it is electronic or analog still is the cold junction. There is no outside power. Your meter display maybe very accurate but it can't make the data any better than what the closed loop provides.

Sorry Cy, most of us use modern sensors, analog to digital converters and digital displays.  Modern systems are very accurate.
