As I understand it oxygen atoms are like frat boys at a toga party, desperate to make a connection before the party is over, and the hotter the party the more anxious they are. We run rich of peak to insure that there will always be enough excess hydrogen and carbon atoms to satisfy their needs before they can grab a hot atom from the exhaust valve on their way out the door. Cars run at low average power settings, temps are low when the exhaust valve opens, so they can get away with lean operation.
