In principle yes, however, with the cooling fluid having a variable resistance, possibly up to k-ohms, it takes a little more. The RX7 has a box in the instrument panel to drive the buzzer and a indicator light. I don't know what is in the box. You would need some sort of amplifier circuit to drive a relay for showing the signal.
I personally would not mess with it. Mainly based on my expirience with the SOOB, if your system is built right, there is no coolant level problem that will not be found in a preflight. Cars don't have that. In over six years of flying, I never had to add coolant when checking before a flight, and the instruments, temperature and pressure, will give you the information you need in flight.
