Also we must remember that the water temps are measured after the engine block and the oil after the cooler. That's why the oil temps are always few degrees lower. There must be some heat transfer between oil and water, if the temp difference is high.

I' also suspect that there is heat/cooling transfer from the oil and coolant. When I taxi, and also during climb out, my oil temperature always lags behind the coolant by 10 degrees or so. In cruise, after just a few minutes, my coolant and oil both settle in to the same temperature.
