I don't think it's a trivial nor obvious task to remove the thermostat and plug the correct hole(s).
I spent several minutes looking at it and could not figure it out. Maybe if someone have cut the end tank in half and have pictures...
Even then I suspect you my not be able to get to the correct hole(s) to plug them.

Test the thermostat in hot water and put it back in the oil cooler.

trip around the pattern and put my hand on the end of the oil cooler
farthest from the inlet and outlets - cool to the touch - not even warm!!
How can that be? The oil temperature is still reading 180 degrees after it's
been shut down for 5 minutes!

Anyone have any ideas on how the check and clear a potentially clogged $575
