I've always been interested in trying to air cool the oil in the pan.  As I understand it, there's a limit to what you can do with a heat sink like this, due to the fact that oil will thicken when cooled.  This means that the oil in contact with the pan surface will cool, then cling to the surface, preventing the hotter oil from touching the heat sink.  
 
Now I'm sure this only happens to some extent, so there's still considerable cooling done, but it seems like it would be much better if you could find a double sided heat sink.  In other words, one that has fins sticking into the oil, and out into the air. 
 
Has anyone ever seen double sided heat sinks?
