OK fellars help me out here with my EM2 display selection,
I've got to nominate either the LCD ( small or large) or the VFD unit ( small only)
I'm not asking for a recommendation but an opinion will do.
For instance what are most people using?

First, I think you transposed the choices.  The LCD comes only in small, and the VFD comes in small or large.  I have the large VFD in the RV-3, and bought the small LCD for the SlingShot.  I can't recall what you're planning to put this in, but the issue will come down to whether you have any shade for your panel.  In the RV-3, the VFD gets almost completely washed out by direct sun, and I have to hold my hand up to shade it, in order to read what's on it, if if the sun is behind me.  I like the larger size, and if you have any shade at all (non-bubble canopy), it would be my choice.  
 
Since the SS is just as bad as the RV-3 wrt the lack of shade, I chose the LCD, because Tracy said it was easier to read in the direct sun.  I've yet to power mine up though, so I have no first hand experience with it.  Hope that helps.
 
Are most people using the LS1 coils and the Mazda Injectors ?
Or are the Ford injectors the choice?

LS-1 all around here.  By Ford, do you mean Mazda?  Most folks around here don't really think of the fact that Ford owns Mazda very often.
