I found a really easy way to do this using a laser level and a homemade stand.

The stand can be thrown together in a few minutes from some 2x4s and assorted scrap wood. The top 'box' should fit the sides of the oil pan closely.  Drill 4 holes around the top so that a 5/16 bolt will drop in.  Put a nut on the bolt, then a washer and set one in each hole.  The bolts should rest just inside the oilpan flange.

Set the airplane up so that the level shines through the horizontal centerline.  Now move the stand in front of the airplane, and set the engine on it.  Adjust the nuts on the bolts to dial in the height, upthrust, and make it level. Now move the level to indicate the vertical centerline.  Slide the stand left or right, or turn it, to center it and get the correct left or right thrust.  Taps from a small hammer at the very bottom of the legs will let you move the stand in very small increments.

The second adjustment will most likely disturb the first, so iterate through both adjustments until nothing more needs to be done.  Now weld the motor mount together in place.
