One possible place is inside the fwd part the of main gear wheel well,
unless you generally fly inverted. Another is the fuselage filet with
the probe sticking out into the area forward of the flap and under cover of
the wing TE skin (there you would also have room to add additional covering
to avoid the sun coming in through the gap). If the probe is mounted
through the fuselage, you should insulate the incoming wires for about a
foot as the warmth from the cockpit can be conducted by the wires and that can
result in false readings.

For
those of you with an AHARS unit used with a glass panel, where are
you locating your OAT probe? I have a Dynon Skyview and it says
do not locate the probe in the sun which rules out the top of the
fuselage, in the vicinity of engine heat which rules out the bottom
(exhaust) or exposed to cabin heat at the rear of the probe which
nixes the clever idea I saw one dude use by mounting the probe in
the cabin air NACA inlet. Now I don't have a clue. Any
input appreciated.
