I've used an iPhone for several years now flying all around the country.  It's usually very difficult to get any coverage at all unless you are very close to a city.  The exception was in NW OK.  For some reason, I've always gotten great service out in the middle of nowhere there not close to any towns or citys......go figure.  As far as the 3G service it's nearly useless.  I will see a good signal that shows 3G, but can hardly ever get enough throughput to be usable, and certainly not usable for stuff like weather radars etc.  About the only thing I have been able to use on a very limited basis is text messages.   On a side note, I used a Verizon phone for a few days and was able to use it for text messages and making and receiving calls very easy in a wide area.  The ATT network is pretty pathetic coverage compaired to Verizon.   Just make sure you are using the phone while VFR.  It's not legal using it during IFR flight. 
I recently used a Zulu headset with bluetooth interface with my iPhone and was quite impressed.  Sorry but the Bose are still a LOT more comfortable.  I expect to see the Bose with bluetooth soon to compete though.
