I just went through the whole interior thing a 16 mos ago.
A few thoughts,
I ended up doing exactly what you are looking to avoid and glued the upholstry material to the console. I also glued to the headliner and window trim rings. No regrets on the glued in places. I have had no reason to pull it up and expect to never do so. You could pull it out and use MEK or similar to get the glue off and start over... no big deal.

Did panels on all other places.  
As for panels, glass IMHO is waaaay to heavy not to mention more work than you need to do. I used that material they make political signs out of plastic cardboard (corplast I think it is called) covered it with a thin white 1/8" closed foam material to make it smooth. You can get it in several thicknesses from an auto upholstry shop. I used political signs for many panels. Light, tough and cheap. 3 of my favorite things! For stiffer panels, I used a foam backer board about 3/16 " thick. It is black foam with paper on both sides used to mount photos. They make a white board for photo mounting but it is too flimsy. The black stuff is very stiff and super light. Cuts great with a band saw too. My whole interior on my 235 is only about 11 lbs...no kidding. One of the reasons for the light ness" is I used 'ultra leather' instead of real leather. The stuff is light beautiful, and wears like iron and you can clean it up with soap and water, won' burn either.
 Unlike real leather, it looks just like new even after 16 mos of use. Same stuff that they put in those fancy Gulfstreams...
Whole deal came out great, have 3 GC awards to proove it...
