I'll jump in here if you don't mind -- I am a little over 6'2" and mostly leg.
Suggest you get (or dummy up) your seats because you will want to know
exactly how you will sit. Knee clearance to the bottom of the instrument
panel when getting in and out are a key. Move the panel back and you can
raise it -- forward and lower for more horizontal knee room -- always
clearing the canope.
Put your floorboards in as low as possible -- you really don't need much
side-to-side room for your feet, and you would be surprized how much easier
it makes sliding in and out.
I also put a 2" riser under the back of the seat pan. This gives an
additional 1/2" of leg room because of the seat slope. I still have
plenty of headroom. (remember, most of my height is in my legs.)
