To quote my many instructors and check pilots,
"Use all the resources you have available to you"
The autopilot is one of those resources. Should you be able to fly without it "Absolutly" but using it does not make you less of a pilot. I try to fly once a week or more. As much time under the hood as possible. Both with and without the use of the autopilot.
I am comfortable in the plane and can hand fly it all the way on long trips in hard IFR. But again to quote one of my check airman. "Use the autopilot so when you don't have it you will be freasher." " Flying an approach to minimums is easier if you are not worn out from hand flying the plane for the previous 3 to 4 hours."
Learn the plane and learn to fly it well. But use all the tools you have.
