We replaced the tubing in Ken Orloff's IV-P because many of the tubing flares were poorly formed and leaking (not by us...).  The plane was far enough along when it came to our shop that it made sense to use hose instead of tubing since routing the hose was much faster and therefore worth the weight penalty.  For most of our jobs we find the best solution is a combination of hoses and aluminum tubing.  Brent is right, Sac Sky Ranch does a great job providing TSO hoses.  We've had mixed results fabricating our own hoses even with all the correct mandrels and special tools.
