Tim,

Yes, the probes can be carefully cut to any length greater than 16 inches.  They consist of a solid rod (approximately 1/8 inch dia) inside a tube (maybe 3/4 inch dia) with plastic "spacers" every 10 to 12 inches or so.  As long as the rod can be properly supported at the cut end (re-use a spacer or ask them to send you several), all will be well.  VM also supplies plastic tube supports that you will install in the ribs that the tube will pass thru.
