I used the 3/8 NPT and screwed in brass AN-4 adapters.  There is a separate restriction elsewhere in the line.
 
As far as material, I just wrote an e-mail and described my application, and the guy wrote back with a recommended material.   The valve is a little bigger and heavier than I would have liked, but it sure is nice having the peace of mind.
