Fixing to get oil pressure gauge and am concerned about the quality of the
electrical sending units. How likely are they to leak or come apart and
cause complete oil loss?

Quality
senders like VDO are essentially bullet proof. I wouldn't worry about them
at all. You will also note that most senders have a tiny little hole
in the threaded end, so as to restrict the rate of oil loss in the
event of a leak.
