Joe, here are a few sources to check out.   I have used schedule 40 (WT 0.10")  304 SS pipe for my headers got it from a stair railing company "RBWagner" back a few years ago (actually built the headers in 1996) and they are still going strong with no leaks.  RBWagner makes just about any degree bend you want with any tube/pipe, but don't think they use 321.
