In chaper "S. Lubricants" on page 27, in the section for hydraulics it
calls out "MIL-H-5606/MIL-H-83282 Or equivalent (Red Oils)".  Right
after that is:

NOTE: Dot 5.1 brake fluid is NOT compatible with MATCO mfg brakes, and
will damage the Buna-N o-rings used in the system.

 
I think they forgot to mention that it was OK to use DOT 5, after all, why make the point of mentioning that DOT 5.1 is bad?  The following description is from the Matco web page, regarding one of their common master cylinders:
 
MATCO mfg's MCMC-4 master cylinder uses a REMOTE reservoir. The MCMC-4 can be used in individual or dual brake applications.  Buna-n orings are used in this assembly.  Mil-H-5606 aircraft hydraulic fluid or compatible fluids are reccomended.  DOT5 may be used but not DOT5.1 which contains glycol.  DOT3 and DOT4 may not be used and will cause immediate damage to the seals.
 
FWIW, I just put DOT 5 in the Kolb brakes, with Matco master cylinders.  I'll also use it in the RV-8, assuming it works OK in the Kolb.
