My question is....has anyone else connected more than one monitor to a single water temp sensor?

Very good question, and I'm afraid the answer is "no can do buddy".  These temp sensors are just variable resistors.  The gauge, or monitor that you hook to it is using it as a voltage divider, and does not expect anything else to be hooked to it.  
 
The scary part is that you may not have ever gotten an accurate reading on your water temps with both connected.  This may be good, or very bad.  
 
There's a temp sensor on the water pump housing, which is the normal one to use for monitoring.  I'd leave that for your engine monitor.  I'd install a temp sensor in the rear housing location (next to the oil pressure sender) for the ECU.  They'll be in the ballpark.
