My suggestion for your rudder trim is as follows:
Cut a piece of .090 aluminum 1inch by about 3 inches (depending how long you
want your tab to be),  drill a bunch of holes along one edge for epoxy flox
to squeeze into and pot it into the trailing edge of your rudder leaving
about 1/4 inch sticking out and 3/4 inch (with the holes) inside the rudder.
You can then attach a rudder trim tab to this protruding 1/4 inch with small
screws if required.  With this approach, if you don't need a trim tab, you
only have a small piece of aluminum protruding only 1/4 inch.  The other
advantage is that you can remove your trim tab and bend it for trim
adjustment as many times as you want without having to worry about damaging
your rudder when you bend the tab.

As far as probability that you will need a rudder trim:  I have heard
builders brag that "if you build it straight, you won't need a rudder trim".
My opinion is that if you say you don't need a rudder trim you have really
had some fantastic dumb luck or you are flying with less than optimum trim.
