I have a couple of temperature probes on my IV-P. One (feeding temperature to my MVP-50 engine monitor) is located in the engine air inlet on the lower cowl. It's protected from the sun, but you have to insulate the inside of the cowl where it's located, or it will pick up radiated engine heat. I have two temperature sensors (including the Chelton EFIS probe) mounted on the bottom of the right wing. This takes a pretty long wiring run, but is the most stable/true temperature location I could figure out. The other obvious location is on, or near the aileron hinge inspection panel on the bottom of the wing. You have to avoid fuel tanks and controls, but that's also a good location. Anywhere on the fuselage, and especially around the bottom, is influenced by cabin or engine heat and/or sun. I tried inside the wing root, but that was picking up heat from some place (the cabin?...or engine exhaust?...both?)
