I believe that the APS folks say to lean on climb to the EGT that you get when you are at sea level, full power, standard day temp.. In my IO-550N, that is about 1240. You should also not try to lean on climb until you are about 5,000 ft.
I personally can't recommend that APS seminar highly enough. It is worth every penny - on-line course or attended course.
