I don't fly formation, but I do have a throttle quadrant in my 360. It's hard to compare to something you don't have, but, although I like the quadrant for looks and panel space it saves, I don't think it will allow any finer controls than a standard push type.
I usually have the tension adjusted such that it actually doesn't move all that easily to keep the throttle from backing off when I am crusing. If I had my choice I would go with a vernier style throttle like Larry suggests. I had one in a Mooney and was very pleased with it.

I have electric trim so my center console is empty forward of the glove box.
