This topic is very well covered by the GAMI boys in their seminars.

As you approach peak from the rich side  (they actually recommend approaching peak from the lean side but that is another story) the CHTs will peak about 50 ROP (rich of peak) and EGTs will peak at peak (by definition)

"how do you know you didn't go through peak already?"
  • If you are on the "rich side" as you lean your engine EGTs go UP
  • If you are on the "lean side" as you lean your engine EGTs go DOWN
"ignition timing could also be a factor"

Ignitition timing is one of the factors that determines how and when the mixture burns, however peak intra-cylinder pressure is also determined by the mixture.  Since 50 ROP mixtures burn the fastest but richer or leaner mixture burn slower, the effective timing is the most advanced at 50 ROP even in a (dual mag) fixed timing engine.  Therefore since mixture affects peak intracylinder pressure, you don't know your effective timing unless you take into account where you timing is set and what your mixture is.

what do the egt's and cht's do as you approach peak from the rich side?
how doyou know you didn't go through peak already?

ignition timing could also be a factor.
