I am planning to have a removable copilot stick and rudder/brake pedals.  It will make it easier for the copilot (sometimes me, sometimes my wife) to stretch out, relax and not hit anything.

 

I am also planning to have a 2-speed or adjustable speed pitch trim.  The trim speed you need for landing or coarse level off, is not the speed you need to get set up level in cruise.

Actually I was thinking a single center-mounted stick and side throttles to
make entry and exit easier, especially for my wife who isn't as limber as I.

I was considering making the copilot stick removable. Might be easier to engineer than a center stick but not as elegant.
