I fly my ES from Longmont , CO (5040') and use the engine different than I understand your explanation. Here is how I takeoff & climb.
 
1. At start of roll:  WOT, full prop, full rich
 
2. After enough speed to use rudder & not brakes to hold center-line: lean mixture and set just a little rich of max power by the seat of the pants. Takes about 10 seconds & completed before 45 knots. Gets me about 2720 RPM, 23+ GPH, 1270 degrees max cylinder EGT temp.
 
3. Leave everything alone until flaps up @ 500' AGL, then reduce RPM to 2650 & continue climb to between 1000  & 1500' AGL.
 
4. At 1000' to 1500' AGL (~6500') lean to 1250 degrees F Max cylinder EGT temperature. Every 1000' from then on until at cruise level lean to 1250 degrees F max cylinder EGT. Cylinder head temperatures all stay below 360 degrees.
 
5. At cruise level decide to run either rich of peak or lean of peak depending on how fast and how much gas you want to burn.
