Just during a runup with the new probe, at 1800 rpm, we were seeing 1400 to 1500 EGT. I don't have my manuals handy for another 5 days. What have you guys seen on your planes as a set of ballpark figures?

I don't know about 1,800 rpms but in flight the EGTs should be between 1,425 and 1,475. If they are lower and your CHTs higher, your timing may be to advanced and of course visa versa. Also remember that all probe temperatures are dependent on how far down the pipe the probe is placed.
