cooler and the cooler being an inch below the inlet lip, I wonder how

I used to have the same oil cooling problem you describe at low speed.
Below 120 KIAS, the oil temperature would climb regardless of power
setting. It didn't matter if I was flying, taxiing, or just sitting
there waiting for a clearance. The attached photos show the inlet
diffuser that currently resides in front of the #2 cylinder and oil
cooler. The oil now cools right down to zero speed. Lengthy ground
operations and touch and go's are no longer an issue.
Please post some pictures of your cowl mods. They sound interesting.
How much lower was the MP in the updraft configuration?
