Steve,

   The question is "why would you want to?"  Seriously,
and I think it's been mentioned recently, if it's working
correctly, the oil thermostat _shunts_ oil to bypass the
cooler, so that the oil doesn't get cooled until it
reaches a minimum temperature (160*F?).  Unless your
thermostat is stuck, such that oil always goes through
your cooler, your symptom isn't a good reason to disable
it.

   One alternative to the thermostat would be controlling
the airflow through the cooler with a butterfly valve -
controlling either the inflow OR the out.
