Would it be possible to change the offset by shimming
the mount attach bolts on one side?

Thanks for the thought.  The good news is that there are a few ways to do this. 
 
To shim the mount, I calculated that I'd need about a 3/4" shim to eliminate the current 1.5 degree offset.  Unfortunately, that would move the prop hub about an inch to the right, screwing up the nose of the cowl. I also screws up both radiator inlets, and the oil cooler inlet.  Might be able to salvage the exhaust on this option though.
 
The most creative option was to get Fred to make me a special engine mount plate, that has the 4 mount points offset in such a way to put the prop hub in the same place, but take out the angle.  This would require moving the rear of the engine to the left.  This keeps from messing up the nose of the cowl, and the oil cooler inlet, but still messes up the rad inlets, and really messes up the exhaust.  Since this moves the engine within the mount, I'd have to check to see if the oil pan would hit the lower tubes. 
 
As you can see, I have put some thought into finding an easy way to do this.  Unfortunately, the only easy way would be to live with 1.5 degrees of offset, the WRONG way.  I'm pretty sure that would be a bad thing, based on Tracy's near fence collision with 0 offset.
