That should work. Maybe not ideal (carbon pots can get "noisy", but should work because input is filtered.

Did you try to measure it as I outlined?

Another place to measure it would be on EC2 J1 pin 26: MixV. (look in your manual to make sure that's the pin).
Again, with EC2 powered, you should measure 0 to 5 volts as you turn the potentiometer through its range.
