Seems this fitting would restrict flow.

It's beyond me why you didn't chose the simple solution that appears to have worked for everyone else of milling the recess deeper and using a thicker O-ring. And before you say you don't have a mill -- I used a 3/4" forstner wood bit in a hand drill.
