Here is a photo of a modified thermostat that I have used when flying in hot weather.
I used this in the early days of flying but after getting the cooling system working good I don't use it any more but carry it with me when I know I will be in 100 plus weather.
It only made about a 10 degree drop in temp and the thing I didn't like about it was when descending in cooler weather the temp would drop off the scale.
A thought is to install a bypass valve to open up the cooling wide open when needed and it would also serve as a backup incase the thermostat would fail.
Also I also drill a weeper hole like Tommy James mentioned however I only drill a 1/8 inch, I found it helps keep air pockets out and I like keeping a wee bit of water flowing to help keep the radiator from freezing when descending in cold weather.
